Description:

Lactococcus lactis is a spherical-shaped, Gram-positive bacterium. It used widely for industrial production of fermented dairy products such as milk, cheese, and yogurt but has also become famous as the first genetically modified organism to be used alive for the treatment of human disease. They have a homofermentative metabolism and have been reported to produce exclusive L-(+)-lactic acid. However, D-(−)-lactic acid can be produced when cultured at low pH. The capability to produce lactic acid is one of the reasons why L. lactis is one of the most important microorganisms in the dairy industry.

Indications & Usage:

It has several fermentative pathways, but the most important purpose is its property to manufacture dairy product such as cheese and milk. Lactococcus lactis specializes in lactate dehydrogenase excreting lactic acid, which is used to preserve food and extend food shelf life. Dairy industries continue to improve the activities and effectiveness of L. lactis by manipulating its environment and cell behavior. L. lactis deals with the production of l-alanine, which is used as sweetener in dairy products.

Other uses that have been reported for this bacterium include the production of pickled vegetables, beer or wine, some breads, and other fermented foodstuffs, such as soymilk kefir, buttermilk, and others.
